Homemade Samosa.
Ingredients.
For stuffing. Potatoes, green chillies, ginger, garam masala, haldi powder, chilli powder, dash of lemon, jeera, dhania, green coriander.
For cover. all purpose flour, salt, ghee, oil.
Oil for frying.
To make the stuffing. Boil potatoes in pressure cooker, peel and mash them and keep aside. In a kadai add a teaspoon of oil and after it gets heated up add jeera, dhania , finely chopped green chillies, grated ginger and saute till it splutters. now add the mashed potatoes, haldi powder, garam masala, chilli powder and salt to taste. mix then in low flame for 5 mnts and add finely chopped coriander leaves and a dash of lemon after switching off the gas.
Put salt and oil, ghee in a vessel and add all purpose flour and make a hard dough to make pooris.
cool the stuffing while you prepare the dough.
Make medium size pooris, cut them into half, fold one half like a cone and fill the stuffing and seal it tightly so that the stuffing does not come out.
Deep fry the samosas in low flame.
Somaosa are ready to ear. Serve hot with ketchup or green chutney.
